Crab Salad
Simple, simple, simple, thats how it should be. For our favorite crab salad we use a packet of our finest crab meat, open it and crumble it gently into a bowl. I don't like to make it too sticky with mayonnaise so its a tablespoon of mayo to a cup of crab meat, mix this in a bowl if you like more mayo then give a little more but let the crab flavour come through. Crab loves lemon, juice from a full lemon for this 450g pack, mix in, black pepper be generous, and if you like it a pinch of cayenne pepper just for a little heat. Heat? a little finely chopped chill is great! dont have it? spot of tabasco.
Now layout your starter plates (this pack will do 4, generous, 6 light) and make a shallow bed of lettuce, chopped iceburg, a little cress and or rocket, alongside this some quartered cherry tomatoes and dress with a good vinaigrette. Then divide the crab meat mixture between the plates and garnish with some flat leafed parsley or coriander and a wedge of lemon to the side. Enjoy!
